How do I enable trash?
Delete does exactly that instead of moving to trash so anything deleted by mistake is gone forever.

It's normally enabled by default.
What type of recording drive are you using?
Are you recording to a directory that is not called "movie"?

Funny that Found this post just when I am about to search for the same thing.
I have the standard setup for my v2 (The one that it came with) and everything was all right until a series of power blackouts did some minor corruption of the hard disk file system that the v2 could not repair.
I plugged it into my windows box to do the repair and it was all fixed.
But now I also have no trash bin. Everything just deletes instantly (wiggles eyebrows).
But now what to do about it?

It's likely the V2 couldn't repair the HDD because you left the drive in NTFS format.
I suggest you copy the recordings off it and use the V2 to format the drive. It'll be formatted in ext4 format, which means Windows won't be able to read it.

True, windows could not read the initially supplied drive but I had a linux reader extension installed when my wife could not bear to lose all her recordings and I am the designated backup donkey. I seem to do that for everyone around here.
If I copy everything off including the backup directory, will I retain all my settings/timers when I copy them back on?

Settings and timers are held in flash memory - they're not stored on the hard drive.

Settings and timers are held in flash memory - they're not stored on the hard drive.
You should backup the settings and timers periodically to allow an easy restoration if you have a software corruption event. Rare but they happen.
Menu >>.Setup >> Software manager >> Create backup

Fandangles already takes backups - "including the backup directory".
