How to set or change the default folder for TV recordings?
It seems the default setting for TV recordings is hdd/media /movies. I have created a new folder called hdd/media/tv_recordings.
How/where do I change the setting to make the tv_recordings folder the default destination for all TV recordings?

Note that changing the Default movie location to that directory will change the location of the trashcan to /media/hdd, and so the trashcan will not appear in /hdd/media/tv_recordings (the leading '/' in the directory name is significant).
Changing the name of the Default movie location has some odd side-effects.
It's not clear exactly what you want to achieve, so it's a bit hard to make specific recommendations.
If you want to have a separate directory where recordings go, it may be better to leave the Default movie location as /media/hdd/movie, and change the Timer recording location and Instant recording location to something like /media/hdd/movie/TV Recordings (i.e. a subdirectory of /media/hdd/movie).
Also, if you use SeriesToFolder, it may not work well if you change where the recordings go.

Just leave it as "movie".
It's honestly not worth losing sleep over.
Just create directories under movie and file your various media types that way.
