Hi everyone hope is all well. I have just received my V2 I purchased for my father and was wondering what is the default SSH password?

You set it yourself - MENU>>Setup>>Network>>Password

I’m happy to purchase another V2 to play with beta software but I can’t take the risk with my father using it everyday! What are the new features he is missing out on? For a basic E2 box in Australia the support is second to none can’t believe how good the support is.

Don't be fooled by the "beta" term. The updates are not too frequent, and usually well tested, and any issues are specifically addressed quickly.
The public release is more than a year old, so you are missing quite a few enhancements and all the latest picons.
Since you are someone who knows the lay of the land, I am in no way hesitant to encourage you to use the beta

My suggestion with using the beta (which we also use on our in-use T4), is to set up on the beta feeds (link in the beta release announcements), but disable checking for updates on your father's V2.
Then follow the discussion on the beta release area, and do updates manually when you feel comfortable that a new beta won't cause problems. That's usually clear within a few days of the beta having been released.
On SSH, IMO the most convenient way to use it is with a public/private key pair. You don't even need to have a password set to install the key pair. You can put the public key on a USB stick, and use FileCommander (MENU>Sources / Files) to make the /home./root/.ssh directory and to copy the public key into it.

I flashed the beta a few hours ago and its rock solid so far! Im not use to a E2 box running a beta not crashing and showing the green screen of death

Heheh yep.
For Beyonwiz, the beta pretty much is the "normal" release firmware.
Beyonwiz "the company" only release the mainline firmware updates intermittently as the box is targeted as being less of an enthusiast device and more of a consumer device (at least in comparison to other E2 boxes). It's all a bit of a hullabaloo pushing out firmware updates to folks who don't engage with forums and like to tinker with their gadgets

Meanwhile, we have a bunch of keen users who love to collaborate here, but are not so hell bent on pushing the cutting edge. The Beyonwiz firmware updates tend to focus on feature improvements that benefit an Australian consumer, so many of the features you will find in OpenATV that are continually tweaked are just not relevant here.
Make sure you let us know of anything that you may really miss from other firmwares that you have used before, and they may be able to be adapted and adopted

Honestly feature wise its fine my only thing would be more skins IMO. Seeing its based from a OE image a OPENPLi or VIX style skin for me would be a nice addition. But that's only because im use to the layout.

A lot of the backend code to support the newer skin features is missing from the Beyonwiz firmware (to the frustration of a dev or two).
We will need a fairly big upstream merge and revamp of the Beyonwiz firmware to close that gap.
Perhaps when the new series development gets underway, the upstream consolidation could be a focus. (Mostly reliant on PeterU's generosity of time to co-ordinate all of that).

Totally understand the work involved as I appreciate you guys don't have the team in Australia like the Euro guys. One question I would like to know still is what image is Wizos based off?

The Beyonwiz firmware has a fairly long and varied history, but at this point the simple answer is OpenATV as I understand it.
OpenATV seems to have the most sensible baseline set of features, and has well established lines of communication to hardware manufacturers for obtaining new drivers and whatnot.
