The V2 has no HDMI input so I'm not sure what you mean. It can't record from HDMI at all.
Only the T4 and U4 have HDMI input.

As prl pointed out, the V2 has no HDMI-IN, so the point is moot.
But as-per the reply to your earlier question about the U4, you would need to use a HDMI splitter to allow stripping the HDCP protection off the HDMI stream for recording on a U4. This is known to work well, and is a cheap solution, so no need to look for a different STB if you already have a U4.

My U4 is connected to the IQ4 through a UHD splitter but the TV Foxtel feed is limited to 1080p if the U4 input is connected or 2160p elsewise.

Correct, the U4 has always only ever supported up to Full-HD resolution, not UHD.

Indeed, that is the case but I was too brief.
I was trying to say Foxtel will not output 2160p to the TV if the splitter is also connected to the U4. Foxtel is limited to 1080p. To watch Foxtel UHD I must disconnect the U4 HDMI-In, which is a pain as I'm physically disabled.
The rear U4 is set to upscale to 2160p, even with Foxtel running via HDMI-IN but obviously not true 2160p.
Hardly ever use the front room U4/Denon setup now and HDMI-In is not connected up front so it runs at 2160p.
