I'm rather keen to replace my T2 with a V2. But the "Shop", after stating "In Stock, Place Order" has below, "Out of StocK" and now other info. Are these, or will these, models be available orn has Beyonwiz effectively stopped? I am not receiving any response to email queries.

Sorry, they are pretty much out of business except maybe for a spare remote.

The only chance is if one comes up used on ebay or gumtree but they're rare. IceTV do have a product to consider but I have no experience with it.

You may also find an occasional offer of a second hand model from someone here though I doubt it would be a V2.

The IceTV IceBox is a possibility. The firmware is still being developed and is not a sophisticated as Enigma 2 base PVRs such as Beyonwiz. Out of the box it supports up to 8 tuners; it has better tuner support than the Beyonwiz. You can build-your-own or get a complete unit from IceTV.
